Extra note: You will need to spend some time watching the AH prices in order to maximize your profit. This takes a little time, but is well worth the pay off. So get to it!
This is exactly what I do with my Druid... I started out doing skinning & leatherworking - but that just didn't work. Then switched to Skinning & Herbalism - and the cash started to flow in. Everything you skin/gather is 100% profit! Just continue to do this until your 40s-50s, then switch one profession (or both) to a Crafting skill. Buy your mats on the AH, and you will start fueling the guys that were once in your position (many levels ago)! It's a cyclical thing.. best way to do it.
